#54 Chocolate Dipped Peanut Butter Crackers

Yay for surviving another Super Bowl Sunday! The only reason I get excited for the Super Bowl is for yummy food and hanging out with friends, of course. And this year was no exception.


The week leading up to the game was a crazy week this year, so I went with a super simple treat for the big night. These are some of my favorite snacks because they are salty and sweet, and therefore, the best of both worlds. 



I also love these because there is NO baking, it is just three ingredients, and they are essentially hassle-free. 



I love that these are so versatile, too. They could be ghosts for Halloween, or topped with a piping of any design for any occasion, or covered with any color of sprinkles to be festive for whatever event or holiday. The possibilities are endless!




So no matter who won the game, I feel like I won because these were a hit! 





Chocolate Dipped Peanut Butter Crackers (Footballs)
Prep Time: 30 minutes. Cook time: 0 minutes. Total time: 30 minutes. 
Yields: about 40 sandwiches

Ingredients:

9.2 oz. box Townhouse FlipSides
scant 1/2 cup peanut butter (do not measure out. Use it as you go)
24 oz. almond bark (chocolate, vanilla or combination)


Directions:

1. Place parchment or wax paper on a large cookie sheet. Use a spoon to scoop about 1/2 teaspoon of peanut butter onto the pretzel side of a cracker. Make the sandwich by placing another cracker, pretzel side up, on top. Place on prepared cookie sheet and repeat for all crackers.

2. Microwave almond bark in 30-second increments until fully melted. Dip cracker sandwiches into chocolate, covering completely, and place on prepared cookie sheet. Let dry completely.

3. If making footballs, melt other chocolate (the one not used to dip). Place melted chocolate in a Ziploc baggie, snip the corner (very small!) and pipe football stitches onto the tops of each sandwich. Let dry completely before serving.

*I used 12 oz. of vanilla and 12. oz chocolate, yielding 20 sandwiches of each kind.
