#49 Fluffy Pumpkin Spice Dip

So I had a little leftover pumpkin in my fridge from my Glazed Pumpkin Spice SconesAnd since I am such a frugal person (or cheapskate, whichever you prefer...), I decided it had to go to good use somehow. It was really meant to be because I had the exact amount left in my fridge that I needed for this recipe. Isn't it the best when things work out like that?


This is a THREE ingredient treat, besides the cinnamon and pumpkin pie spice that you add in to your liking. It can double as a snack or dessert, you only have to dirty one bowl and one spoon, it can be made in less than two minutes, and it tastes DELICIOUS. There's really nothing wrong with this dessert...other than that I ran out of animal cookies and then had to use a spoon. I know, I'm terrible.


But, I really don't feel that bad because this is a pretty light dessert - I used sugar free Cool Whip (even though the pictures say otherwise. I already threw out the sugar free tub, so I grabbed the regular from the fridge). The pumpkin is pretty healthy and although the pudding isn't sugar free, it isn't all too terrible for you either. 


This dip is pretty thick because of the pudding, but it's also fluffy. It would be great at a get together. If it was put in a cute little bowl with cookies and crackers around it, it would get eaten up in no time!


This recipe is a super easy, no-mess treat that's great for the fall season. It can be doubled, tripled, or even sextupled. (Yes, that is this recipe times six. I won't judge you one bit.) This dip only lasted in my house a couple days. Let's see how long it lasts in yours. ;)





Fluffy Pumpkin Spice Dip
Prep Time: 5 minutes. Cook time: 0 minutes. Total time: 5 minutes
Serves: about 6

Ingredients:

1/2 cup pure pumpkin (such as Libby's)
2 cups Cool Whip (light, sugar free, fat free or regular)
3.4 oz. box instant vanilla pudding (dry mix only)
1 teaspoon cinnamon, plus more to taste
1/2 teaspoon pumpkin pie spice, plus more to taste

graham crackers, animal crackers, Nilla wafers, etc. for serving


Directions:

1. In a small bowl, combine all ingredients until well combined and thick. Make sure pudding mix is completely incorporated. Sprinkle additional cinnamon on top for decoration, if desired. Serve with graham crackers, animal crackers, etc. Cover and refrigerate leftovers.

*Tripling the recipe is easy: Use one 15 oz. can pure pumpkin, a 16 oz. container of Cool Whip and three 3.4 oz. boxes of pudding, plus cinnamon and pumpkin pie spice, to taste.
