#39 Chocolate Peanut Butter Breakfast Cookies (Healthy, No-Bake)

What does one do when she has a sugar addiction and is going on a beach vacation in two weeks? (I'm referring to a friend, naturally.) She makes healthy cookies, of course. And not just healthy cookies, but quick, easy, chocolate-and-peanut-butter, no-bake cookies.


I've been trying to find a(n actually good) recipe for healthy cookies. But, most use bananas. I didn't want a banana cookie. I wanted a chocolate, peanut butter, delicious-tasting-but-you-would-never-know-this-is-healthy cookie. So healthy you could eat them for breakfast. If you think about it, minus the dark chocolate, most of these ingredients are typical for breakfast: peanut butter, honey, oats, cereal. So, ta-da, breakfast cookies!


These only take 10 minutes to make, at the most, so no matter what you're doing, you have time to make these! They satisfy the sweet tooth without all the added sugar. 



In addition to the lower amount of sugar, these cookies also have five grams of protein to help keep you fuller. The chia seeds are an optional but highly recommended addition. They offer several benefits with few calories: fiber, antioxidants, protein, and Omega-3s. Besides the health benefits, I really like the taste they bring to the cookies. (I'm not really a chia seed freak, but they actually do up the nutrients.)



Favorite things about this dessert? 1. Chocolate. 2. Peanut butter. 3. HEALTHY. BREAKFAST cookies (duh). 4. They seriously take no time to whip together. I think the time it took for the chocolate to harden in the fridge was longer than it took me to actually make the cookies. 5. All of the ingredients are probably in your cabinets. And 6. This recipe can easily be halved, doubled, tripled, or quadrupled if you want. 



Need I say more? I don't think so. Get your chocolate fix in without all the sugar and make these!




Chocolate Peanut Butter Breakfast Cookies (Healthy, No-Bake)
Prep Time: 10 minutes. Cook time: 0 minutes. Total time: 10 minutes
Yields: 9 cookies

Ingredients:

1/2 cup natural peanut butter (Look for kinds with peanuts and salt as the only ingredients) 
2 tablespoons honey
1 teaspoon vanilla extract
*1/2 cup old-fashioned/rolled oats (can be organic, gluten-free, extra thick, etc.)
**1/2 cup Honey Nut Cheerios
2 tablespoons chia seeds, optional but recommended (I used these)
1/4 cup dark chocolate chips

Directions:

1. In a medium bowl microwave peanut butter and honey for 20-30 seconds until peanut butter is soft and smooth. Stir to combine. Add in vanilla extract and stir. Stir in oats, Cheerios and chia seeds until combined.

2. Line a small baking sheet or plate with wax or parchment paper. Using your hands, form the mixture into cookie-shaped discs and place on paper.


3. Microwave chocolate chips in 20-second increments until fully melted. Using a spoon, dollop the chocolate on top of each cookie and spread to coat. Alternatively, transfer melted chocolate to a Ziploc baggie, snip one end and drizzle on top of cookies.

4. Let chocolate harden at room temperature or place in the fridge for 5-10 minutes to speed up the process. Serve at room temperature or cold (I prefer mine cold). Store cookies in an airtight container.

**To be even healthier, substitute with whole-grain brown rice krispie cereal or even regular rice krispie cereal. I have tried Honey Nut Cheerios and regular rice krispie cereal. Both are delicious!
