#37 Mounds Frosted Brownies

Happy Father's Day!!! I had this weekend off from work, which is quite rare, so I was very happy I had the time to make my dad a new dessert! He is the only one in our family (besides me) who likes coconut, so I make him the best coconut desserts I can find on special days like today.




And I think I rounded up a pretty delicious recipe for Father's Day this year. Mounds. Frosted. Brownies... Meaning: A layer of chocolate-y, dense brownies, topped with a sweet shredded coconut and chocolate chip mixture, topped again with Hershey's frosting. I'm pretty sure my dad could (and would, will, has before...) devour a pan of these in a matter of a couple days.






If Almond Joys are more your thing, add the whole or slivered almonds in your coconut mixture. I love almonds, so this would be a great addition for me. Also, if you think this treat seems just a bit too much of a sugar-and-chocolate-overload, (come on, it's a holiday!) you can buy or make your favorite brownie mix without the Hershey's frosting! Because a layer of brownie topped with sweet coconut doesn't sound all too terrible either...


I got two thumbs up and "They're awesome!" from my dad for this dessert. It was a successful Father's Day treat, although he did say they were very filling! They will definitely serve several people.




So, if your dad (or anyone in the family) loves Mounds or Almond Joy, MAKE THESE. Luckily for my dad, he'll get most of the pan to himself, but they are definitely shareable, too. 




They're unbelievably easy (from a box, no less) and are made with seven ingredients, most of which you'll have in your cabinet. Now excuse me while I sneak a bite or two of my dad's Father's Day dessert...




Mounds Frosted Brownies
Prep Time: 10 minutes. Cook time: 35 minutes. Total time: 45 minutes.
Yields: 8x8 or 9x9 pan; 16 brownies

Ingredients:

19.1 oz. Betty Crocker Supreme Brownie Mix with Hershey's Frosting Packet
1/4 cup water
1/3 cup vegetable/canola oil
1 egg
14 oz. can sweetened condensed milk (can be reduced fat or fat free)
4 cups (12 oz. bag) sweetened flaked coconut (I used this)
1 cup powdered sugar
chocolate chips, optional
almonds or almond slivers, optional


Directions:

1. Preheat oven to 325 degrees. Lightly spray an 8x8 or 9x9 square dish with cooking spray. Set aside. 

2. In a medium bowl, combine brownie mix, water, oil and egg. Mix until well blended. Pour into prepared pan and bake according to package directions (32-39 minutes depending on pan). Remove from oven and let cool completely.

3. In a medium bowl, combine sweetened condensed milk, coconut, powdered sugar and optional chocolate chips and/or almonds. Stir until combined. Spread mixture evenly over cooled brownies.


4. Knead Hershey's frosting mix (from brownie box) for ten seconds. Snip the corner and coat the coconut mixture.

5. Allow to set 5 minutes before cutting and serving.
