I love Peeps. They're festive, cute and yummy (especially the chocolate-dipped ones...) So, I decided to take advantage of the fact that s'mores are one of my favorite desserts AND that Peeps are in season. And, voila, Peeps S'mores Bars made with Heath toffee bits. Delicious.
I took these to a little cookout my friends and I had over spring break. And my friends made Reese's Oreo balls (another must-try recipe)... So we were pretty much all sugar-ed out. Nobody complained though.
Prep Time: 10 minutes. Cook time: 8 minutes. Total time: 18 minutes.
Yields: 9 s'mores squares
Ingredients:
9 sheets graham crackers (18 squares)
6 tablespoons butter, melted
3/4 cup toffee bits, such as Heath
3/4 cup chocolate chips (mini work the best)
9 Peeps marshmallows (chicks or bunnies would work)
sprinkles, optional

Directions:
1. Preheat oven to 325 degrees. Lightly spray a 9x9 baking pan with cooking spray. Set aside.
2. With a food processor, blender or rolling pin, crush graham crackers until they are crumbs.
3. In a small bowl, combine melted butter, graham cracker crumbs and toffee bits until well combined. Press crust into prepared pan, using your hands or spatula to even it out.
4. Bake crust for about 8 minutes until golden brown. Remove from oven and immediately cover in chocolate chips. Let chocolate chips sit for a couple minutes until nearly melted. With a spatula, carefully spread melted chocolate evenly across crust.
5. Let crust and chocolate sit about 10 minutes before placing Peeps and sprinkles on top.
6. Lightly cover pan with aluminum foil and let cool at room temperature at least an hour to allow chocolate to harden. It is suggested to allow the chocolate to cool about 30 minutes before cutting. (Then, it's not too wet, but not yet hardened.) If preferred, it can be served before the chocolate has completely hardened - it will just be a little messier!
