#24 Pineapple Raspberry Lemonade Slush

Can't we just pretend that it's summer?! I want shaved ice, smoothies, ice cream and slushes again! This was a small piece of summer in the middle of this freezing, snow-covered February.



This smoothie was made for Valentine's Day - it's pretty pink and festive, right?! The funny thing is I was (as usual) winging the recipe, but it ended up being DELICIOUS. It's also very flexible, so substitute the fruit for your preferences.


If you would like a thicker slush, throw this in the freezer for a bit before serving. Freezing them for about 45 minutes gives it a nice slush thickness. My boyfriend Noah and I drank them immediately after we blended it, and it was so, so good. And, I would consider it almost healthy! Come on, just a little sugar can't hurt!


This recipe yields enough for one large mason jar. If you want to half the recipe for yourself, go ahead! I made myself a second batch two days later - no shock there. 


Somehow, this was Noah's favorite part of our Valentine's Day dinner. He tried it and said he could just drink that instead of having the whole meal. Yay for a fruity, summer drink in February! You will love it!



Pineapple Raspberry Lemonade Slush

Prep time: 5 minutes. Chill time: 0 minutes. Total time: 5 minutes.
Yields: 3 cups

Ingredients:

1/4 cup sugar 
1/2 cup lemon juice
1/2 cup lemon lime soda (or water)
2 cups lemon lime soda, frozen into ice cubes, divided (or regular ice cubes)
1/2 cup fresh pineapple, cut into cubes (or your choice of fresh fruit)
1/2 cup frozen raspberries (or your choice of frozen fruit)


Directions:

1. Place sugar, lemon juice, lemon lime soda and 1 cup lemon lime ice cubes in a blender or food processor. Blend until smooth. 

2. Add remaining ice cubes, fresh fruit and frozen fruit and blend until smooth. 

3. Pour into cups (or mason jars). Place in the freezer to thicken or serve immediately, with straws and/or fresh fruit, if desired.
