#23 Crockpot Garlic Parmesan Potatoes

YES. POTATOES. You can ask almost anyone who knows me well enough - I LOVE potatoes. I could eat them literally for breakfast, lunch and dinner. 


Therefore, I was super excited to make these! My boyfriend Noah and I made these for Valentine's Day, and they were a perfect side dish. (Let's be honest, potatoes would be a perfect entree, too. Or is it just me who thinks that?)


One thing I really like about this recipe is how flexible it is. If you don't have some of the spices, use your best judgment, and throw in what you have! But, if you want suggestions on the seasonings, see the link I adapted this from. 




These yummy garlic potatoes are super easy. (They go in the slow cooker, for goodness sake.) To prove how easy they are, Noah even helped. He actually made me snap a picture of him seasoning them with Parmesan, his favorite part.


The only disclaimer I have is make sure you set aside enough time for these to cook. Cook time does vary depending on the size of your potatoes, so allow more time if needed! You won't regret making these - they're delicious!



Crockpot Garlic Parmesan Potatoes

Prep Time: 10 minutes. Cook time: 5 hours. Total time: 5 hours, 10 minutes.
Serves: 6-8

Ingredients:

3 pounds baby Dutch yellow potatoes, halved
2 tablespoons olive oil
2 tablespoons butter
3 tablespoons minced garlic
1/2 teaspoon dried oregano
1 teaspoon rosemary
2 tablespoons chopped parsley leaves, plus more garnish, if desired
l/4 cup grated Parmesan, for garnish, if desired (recommended)
salt and papper, to taste


Directions:

1. Lightly coat the inside of a crockpot with cooking spray.

2. Place potatoes in crockpot, followed by all other ingredients besides Parmesan. Stir gently to evenly coat potatoes.

3. Cover and cook on low heat 5-6 hours or on high 2-3 hours, or until tender. Cooking time varies depending on the size of potatoes.

4. Once tender, garnish with Parmesan, salt and pepper, if desired. Serve immediately.
