#22 Grandma Ziegler's Cherry Chip Cookies

Ahh, Grandma's cooking. There's really nothing like it, right? No matter who your grandma is. When I make these, the smell in my kitchen takes me back to my grandma's little old house in western Kansas. It's pretty nostalgic, but in the best way possible. Nobody could rule the kitchen quite like Grandma Ziegler. 


These are a great treat just in time for Valentine's Day! I actually bought these in the Valentine's Day section at Walmart. It can be difficult to find them otherwise, so hurry out to buy a bag!


Besides the obvious cherry flavor these cookies possess, they also have a little surprise: cornflakes. Now you, along with me when I first heard, might think that's odd, but they bring a delicious, subtle crunch to the cookies.



I LOVE these cherry chips, and therefore LOVE these cookies. I cannot stop eating them! I did make a couple revisions, and I think I may try to make a few more soon, but the recipe is just so simple. You don't have an excuse not to make these! (The only one I can think of is that they aren't chocolate.. And that's not a very valid reason, although I could almost understand.)


Now, I know when you make these, you won't be taken back to small-town Kansas like I am. But! I do know you will enjoy these delicious cherry chip cookies. You really cannot go wrong with Grandma Ziegler's baking. She would not steer you wrong. Trust me.



Grandma Ziegler's Cherry Chip Cookies

Prep Time: 10 minutes. Cook time: 12 minutes. Total time: 22 minutes.
Yields: 3 dozen cookies

Ingredients:

1 cup (2 sticks) butter, softened
1/2 cup sugar
1 egg yolk
1 1/2 teaspoons almond extract
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 1/4 cup flour
3/4 cup cornflakes, lightly crushed
10 oz. package cherry chips

Directions:

1. Preheat oven to 350 degrees.

2. In a medium bowl, with an electric mixer, cream together butter and sugar until light and fluffy, 1-2 minutes. Mix in egg yolk, vanilla extract and almond extract.

3. In a separate bowl, sift together salt and flour, and add to sugar mixture. Mix until well blended.

4. In a small bowl, (or just place them on paper towels) gently crush cornflakes. You do not want crumbs, but crush them enough so there are no longer large pieces. Note that it is 3/4 cup cornflakes after being crushed.


5. Stir cornflakes and cherry chips into dough and mix until thoroughly incorporated.

6. Roll into 1" balls and place on a cookie sheet. Flatten them slightly - they do not spread much.

7. Bake for 10-14 minutes until the bottoms are a light golden brown.
