This was one fall recipe I had to try. I mean, seriously. Candy corn, peanut butter, Rice Krispies. It's almost too good.
I was very excited about this dessert because I took it to a football tailgate, and people asked for the recipe. It was a beautiful thing. And lucky for me, the recipe is so easy I was able to ramble it off to the ladies who asked.
This is a quick dessert, ready in 10 minutes. I would highly recommend getting all of your ingredients together before starting to make it. Mix your peanuts, Rice Krispies and candy corn in a bowl, and have them ready to go. Divvy out your peanut butter so it's easy to throw in the pan when the time comes.
The original recipe I got this from also looks delicious. It started as Scarecrow treats (basically this dessert on top of yellow cake). I just tried to lighten it up (yeah, right) by taking out the cake. Personally, I think it was pretty successful, even going solo without the cake. Eat up!
Prep Time: 10 minutes. Cook time: 0 minutes. Total time: 10 minutes.
Yields: 9 x 13 pan; about 15 bars
Ingredients:
1/2 cup light corn syrup
1/4 cup sugar
1/4 cup brown sugar
1/2 cup creamy peanut butter
2 teaspoons vanilla
2 cups crispy rice cereal
2 cups peanuts (cocktail or dry roasted work - I used a combination)
1 cup candy corn
1 cup mini marshmallows
1/4 cup sugar
1/4 cup brown sugar
1/2 cup creamy peanut butter
2 teaspoons vanilla
2 cups crispy rice cereal
2 cups peanuts (cocktail or dry roasted work - I used a combination)
1 cup candy corn
1 cup mini marshmallows
Directions:
1. Grease a 9 x 13 pan with cooking spray. Set aside. Get all ingredients ready before you begin. In a medium bowl, combine cereal, peanuts and candy corn and stir until mixed.
2. Combine corn syrup, sugar and brown sugar in a saucepan on medium heat until it comes to a boil, about 3-4 minutes. Once it boils, remove from heat.
2. Combine corn syrup, sugar and brown sugar in a saucepan on medium heat until it comes to a boil, about 3-4 minutes. Once it boils, remove from heat.
3. Mix in peanut butter and vanilla, stirring until fully incorporated. Don't stop stirring or it will begin to set up.
4. Add in marshmallows, stirring until they are about halfway melted. Then, add in cereal, peanuts and candy corn mix. Stir until the cereal mix is all coated in the peanut butter mix.
5. Quickly pour into the prepared pan. Evenly smooth it over with a spatula, spraying the spatula with cooking spray if needed.
6. Cut into bars and serve.
